Delicious tuna and artichoke wraps with cucumber, tomatoes, lemon zest, and crunchy French-fried onions. Perfect for a satisfying, flavorful meal.
Ingredients:
  • 2 (5-ounce) cans tuna, drained
  • 1 (7.5-ounce) jar artichoke hearts, drained and chopped
  • 1 mini cucumber, chopped
  • 1/2 cup chopped grape tomatoes
  • 1/3 cup mayonnaise
  • 1/2 teaspoon stone ground mustard
  • 1 teaspoon garlic salt
  • 1 lemon, zested
  • 2 tablespoons fresh lemon juice
  • 3 (10-inch) sun-dried tomato basil tortillas
  • 6 leaves lettuce
  • 6 tablespoons French-fried onions
Instructions:
  • Combine tuna, artichokes, cucumber, tomatoes, mayonnaise, mustard, garlic salt, lemon zest, and lemon juice in a bowl and mix well.
  • Place tortillas on a flat surface and top each with 2 lettuce leaves. Spoon tuna mixture down the center of each tortilla. Sprinkle 2 tablespoons of French-fried onions over the tuna. Fold the sides of the tortilla inward, then roll the burrito tightly around the filling.
