Delicious tuna patties packed with fresh veggies, easily customizable with whatever you have on hand.
Ingredients:
  • 3 slices hearty country bread
  • 3 cups water
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 0.25 cup fresh spinach leaves
  • 3 cloves garlic, chopped
  • 2 (5 ounce) cans tuna, drained and flaked
  • 6 mushrooms, diced
  • 1 zucchini, diced
  • 1 stalk celery, diced
  • 1 tablespoon chopped fresh dill, or more to taste
  • 1 teaspoon salt
  • 0.25 teaspoon ground black pepper
  • 0.25 teaspoon dried basil
  • 0.25 teaspoon oregano
  • 1 tablespoon olive oil, or as needed
Instructions:
  • Submerge bread slices in water in a shallow dish until fully softened; then, carefully squeeze out excess water from the bread.
  • Heat up a generous drizzle of olive oil in a non-stick skillet over medium heat. Sauté onion, spinach, and garlic until the onion becomes soft and translucent, approximately 5 minutes.
  • Combine the onion mixture with softened bread, tuna, mushrooms, zucchini, celery, eggs, dill, salt, pepper, basil, and oregano in a large bowl until well mixed. Shape the mixture into around 24 thin, palm-sized patties.
  • In a large skillet over medium heat, heat 1 tablespoon of olive oil. Cook the patties for 2 to 3 minutes on each side until fully cooked.
