Transform canned tuna into delicious, family-friendly patties.
Ingredients:
  • 600g sebago or golden delight potatoes, peeled, cut into 5cm pieces
  • 425g can tuna in springwater, drained, flaked
  • 1 brown onion, finely chopped
  • 125.00 ml pitted black olives, finely chopped
  • 50.00 ml plain flour
  • olive oil cooking spray
  • 275.00 gm oven-roasted garlic and onion tomato pasta sauce
  • 500g steamed green vegetables, to serve
Instructions:
  • In a saucepan, submerge the potatoes in cold water and bring to a boil over high heat. Reduce to medium heat and simmer covered for 15 minutes until tender. Drain and transfer to a large bowl. Mash until smooth and let cool slightly before further use.
  • Combine tuna, onion, olives, and egg with the potato, mixing thoroughly. Incorporate 2 teaspoons of flour until fully blended. Divide the mixture into 12 evenly sized portions and shape into 1.5cm-thick patties.
  • Preheat your oven to 160°C. Spread the remaining flour on a plate, then coat the patties in the flour, shaking off any excess. Heat a large non-stick frying pan over medium heat until hot. Spray both sides of the patties with oil. Cook the patties in batches for 4 to 5 minutes per side until they are golden and heated through. Transfer the cooked patties to a baking tray to keep warm in the oven.
  • Heat pasta sauce in a saucepan until boiling. Plate the patties and top with the sauce. Season with salt and pepper. Serve with steamed vegetables.
