Quick and versatile tuna melts on English muffins, ideal for any meal or occasion. Ready in under 30 minutes.
Ingredients:
  • 0.25 stick butter
  • 1 small onion, finely diced
  • 0.25 teaspoon minced garlic
  • 0.5 teaspoon seafood seasoning (such as Old Bay®)
  • 0.5 teaspoon chopped fresh cilantro
  • 0.25 teaspoon onion powder
  • 0.25 teaspoon sea salt
  • 0.25 teaspoon ground black pepper
  • 2 (5 ounce) cans albacore tuna packed in water, drained
  • 0.5 cup mayonnaise
  • 3 English muffins, split
  • 1 large vine-ripened tomato, cut into 6 slices
  • 6 slices American cheese
Instructions:
  • Preheat your oven to a toasty 450 degrees F (230 degrees C).
  • In a small frying pan, gently melt butter over low heat. Cook onion and garlic until tender and translucent, about 5 to 7 minutes. Mix in seafood seasoning, cilantro, onion powder, salt, and pepper. Take off the heat.
  • In a bowl, mix tuna and mayonnaise. Stir in the sauteed mixture from the pan and blend thoroughly using a fork.
  • Arrange 6 halved English muffins on a baking sheet. Evenly distribute tuna mixture on each muffin. Place a slice of tomato on top of each muffin and then add a slice of American cheese.
  • Bake until the cheese is gooey and bubbly, approximately 5 minutes in the preheated oven.
