Delicious tuna noodle casserole with mushrooms, peas, and corn. Customize with your favorite pasta and cheese.
Ingredients:
  • 1.25 cups milk
  • 3.25 cups penne pasta
  • 1.5 cups sliced fresh mushrooms
  • 1 onion, finely chopped
  • 1 tablespoon all-purpose flour
  • 0.5 cup frozen peas
  • 0.5 cup frozen sweet corn
  • 1 (7 ounce) can tuna, drained
  • 0.5 (8 ounce) package shredded Cheddar cheese
Instructions:
  • 1. Bring a large pot of salted water to a boil. 2. Add penne and cook until al dente, about 11 minutes, stirring occasionally.
  • Preheat your oven to 400 degrees F (200 degrees C) to create the perfect cooking environment.
  • In a large skillet over medium heat, melt butter then sauté mushrooms and onion until softened. Stir in flour and cook for 1 minute. Gradually whisk in milk, then add peas and corn. Simmer until sauce thickens, about 5 minutes. Fold in tuna and half of the Cheddar cheese until fully combined.
  • After draining the penne, gently mix it with the sauce until fully coated. Transfer the mixture to a generously sized baking dish.
  • Bake until the cheese is gooey and the top is golden brown, for 20 to 30 minutes in the preheated oven.
