Whip up a tasty Italian tuna pasta bowl for a quick and satisfying dinner.
Ingredients:
  • 185g can Tuna in Olive Oii
  • 400g can Italian diced tomatoes
  • 350g ribbed penne
  • 80g black olives
  • 2 anchovy fillets (optional)
  • 40.00 ml salt-preserved capers, well rinsed
  • 1 clove garlic
  • 20.00 ml chopped parsley
  • 72.80 gm olive oil
  • Salt and pepper to taste
Instructions:
  • Sauté the garlic and anchovy in olive oil until fragrant and anchovy dissolves. Stir in tomatoes and olives, then simmer until sauce reduces by 1/3. Season with salt and pepper.
  • Cook the pasta in a generous amount of salted water until it is ‘al dente’. Drain and place back in the saucepan. Mix in the sauce along with the tuna and capers. Top with the chopped parsley and serve promptly.
