Try this flavorful tuna rice salad for a nutritious midweek meal, with options for FODMAP-friendly variations.
Ingredients:
  • 250g Uncle Ben's® Microwave Brown Rice
  • 200.00 gm doongara clever rice
  • 125.00 ml frozen peas
  • 2 Moraitis gourmet tomatoes, diced
  • 3 green onions, thinly sliced
  • 2 x 185g cans tuna in springwater
  • 2 large lemons
Instructions:
  • Prepare brown rice as directed on packet. Once cooked, spread it out on a tray to cool down. In a saucepan, combine doongara rice and 1 1/2 cups of cold water. Bring to a boil over high heat, then lower the heat, cover, and simmer for 12 minutes or until the rice is tender. Remove from heat, add peas, cover, and let it sit for 5 minutes. Drain the rice and peas, refresh them with cold water, and set aside to cool.
  • In a large bowl, mix together brown rice, white rice, peas, tomatoes, and green onions. Drain tuna and break into large chunks. Add tuna to the salad and gently toss to combine.
  • Juice one lemon and cut the remaining lemon into wedges. In a screw-top jar, combine 1/4 cup lemon juice, oil, salt, and pepper. Secure the lid and shake well. Drizzle over the salad and gently toss to coat. Serve with lemon wedges.
