Ingredients:
  • 250g fresh green beans, topped
  • 250g fresh butter beans, topped
  • 1 lemon
  • 2 185g cans tuna in olive oil
  • 1/2 medium red onion, finely sliced
  • 36.40 gm extra virgin olive oil
  • 20.00 ml balsamic vinegar
  • 1 garlic clove, crushed
  • Salt & ground black pepper, to taste
Instructions:
  • Place the green and butter beans in a pot of boiling salted water and cook for 2 minutes until tender crisp. Drain and rinse under cold water to refresh. Transfer to a large bowl.
  • Peel the lemon with a vegetable peeler, making sure to remove the white pith, then thinly slice the peel into strips. Alternatively, zest the lemon to extract its juice.
  • Tear the tuna into large chunks and combine it with the beans, half of the lemon zest strips, and the red onion.
  • In a small bowl, whisk together the reserved tuna oil, extra virgin olive oil, 1 tablespoon lemon juice, balsamic vinegar, and garlic. Drizzle the dressing over the salad, season with salt and pepper, and gently toss to combine. Serve at room temperature and garnish with the remaining lemon rind strips.
