Try using the freshest fish for a vibrant and invigorating dish.
Ingredients:
  • olive oil
  • 2 cloves of garlic peeled and very finely sliced
  • a small bunch of fresh coriander
  • 1 spring onion
  • 1 fresh green chilli stalk removed
  • 3 limes
  • 200 g (sushi-grade) tuna from sustainable sources
  • 2 blood oranges peeled and sliced into rounds, pips removed
  • 10 red or yellow cherry tomatoes quartered
  • 4 heaped teaspoons soured cream
Instructions:
  • Pour olive oil into a small pan over medium heat. Fry garlic slices until lightly golden and crispy without burning. Drain on kitchen paper. Set aside coriander leaves in a cup of cold water. Serve immediately for the freshest flavors. Blend half of coriander, spring onion, and chili with lime juice, olive oil, salt, and pepper. Adjust consistency with water if needed. Finely chop the remaining coriander, spring onion, and chili with tuna on a board. Place orange slices on plates, spoon green sauce around them. Toss tuna mixture with lime juice and olive oil, adjust seasoning, then spoon over orange slices. Top with tomato quarters, soured cream, garlic chips, and coriander leaves. Serve with lime wedges. Add sliced chili or paprika if desired. Enjoy!
