Turkey and Bean Cassoulet

Indulge in a savory French turkey cassoulet, packed with beans and tomatoes, slow-cooked for exquisite flavor.
Ingredients:
  • 1 1/2 cups dried great northern beans
  • 1 lb. fresh turkey breast tenderloins, cut into 1-inch pieces
  • 1 cup sliced celery
  • 1 medium green bell pepper, chopped
  • 1 medium onion, chopped
  • 2 garlic cloves, minced
  • 2 bay leaves
  • 1/4 teaspoon pepper
  • 1 (14 1/2-oz.) can ready-to-serve chicken broth
  • 1 1/2 cups water
  • 1 (14.5-oz.) can diced tomatoes, undrained
  • 3/4 teaspoon salt
Instructions:
  • In a medium bowl, place the beans and cover them with water. Allow them to soak overnight.
  • Drain the beans and discard the water. Transfer the beans and all other ingredients, excluding the tomatoes and salt, into a 3 1/2 to 4-quart Crocker-Pot® Slow Cooker.
  • Cover and simmer on low for 8 to 10 hours.
  • Prior to serving, gently take out the bay leaves, then mix in the tomatoes and salt. Cover and let it cook on low for an extra 10 minutes or until fully heated.
