Turkey and Broccoli Manicotti

Indulge in delicious and healthy low-fat manicotti for dinner tonight!
Ingredients:
  • 8 uncooked manicotti pasta shells
  • 3/4 lb lean (at least 90%) ground turkey
  • 1 medium onion, chopped (1/2 cup)
  • 1/2 teaspoon garlic salt
  • 1 container Greek Fat Free plain yogurt
  • 1 1/2 cups frozen chopped broccoli, thawed and drained
  • 1 1/2 cups shredded mozzarella cheese (6 oz)
  • 1 teaspoon Italian seasoning
  • 1 jar (14 oz) tomato pasta sauce
Instructions:
  • Preheat your oven to 350°F and generously coat a 13x9-inch (3-quart) glass baking dish with cooking spray.
  • Prepare pasta shells according to package instructions. Once cooked, refresh under cool water and drain thoroughly.
  • In a 10-inch nonstick skillet, sauté the turkey, onion, and garlic salt over medium heat for about 5 minutes, stirring often, until the turkey is cooked through. Take the skillet off the heat and mix in the yogurt, broccoli, 1/2 cup of cheese, and Italian seasoning.
  • Spread a generous amount of pasta sauce in the baking dish. Fill each shell with the delicious turkey mixture and arrange them neatly in the dish. Pour the rest of the pasta sauce over the shells. Cover the dish with foil and bake for approximately 25 minutes until everything is hot and bubbly. Finally, generously sprinkle the remaining cheese over the shells and bake for an additional 5 minutes until the cheese is beautifully melted.
