Turkey and cranberry burgers

Festive Christmas in July turkey burger with cranberry sauce, rocket & tomato.
Ingredients:
  • 500g turkey mince
  • 2 spring onions, sliced
  • 35g dried cranberry
  • 2 garlic cloves, crushed
  • 1 small carrot, grated
  • 1 small zucchini, grated, squeezed to remove excess liquid
  • 25g breadcrumbs
  • 1 Free Range Egg, lightly beaten
  • Vegetable oil, to deep-fry
  • 800g gold sweet potato, cut into small wedges
  • 18.20 gm extra virgin olive oil
  • 80g brie, sliced
  • 60g baby rocket leaves
  • 2 tomatoes, sliced
  • 6 Kaiser Rolls, split, toasted
  • 100g cranberry sauce
Instructions:
  • In a bowl, mix together the mince, spring onion, cranberries, garlic, carrot, zucchini, breadcrumbs, and egg. Season the mixture and shape it into 6 patties. Chill on a plate in the fridge for 10 minutes to set.
  • Heat vegetable oil in a saucepan over medium heat until it reaches 180C (test by dropping a cube of bread - it should turn golden brown in 15 seconds). Cook sweet potato in batches for 5 minutes or until golden and tender. Drain on a paper-towel-lined plate.
  • Heat olive oil in a large frying pan over medium heat, and cook patties for 5 mins on each side until cooked through. Top patties with brie for the final 3 mins of cooking.
  • Arrange the rocket, tomato slices, and patties on the bun bottoms. Finish with a dollop of cranberry sauce and place the bun tops. Enjoy with a side of sweet potato wedges.
