Upgrade your turkey dinner with Southwestern flair using cornbread stuffing mix and green chiles.
Ingredients:
  • 2 tablespoons butter or margarine
  • 1 medium onion, chopped (1/2 cup)
  • 1 small red bell pepper, chopped (1/2 cup)
  • 4 cups seasoned cornbread stuffing mix
  • 1 cup frozen whole kernel corn (from 1-lb bag)
  • 1 can (4 oz) Old El Paso™ Chopped Green Chiles, undrained
  • 1 1/2 cups water
  • 2 turkey breast tenderloins (about 3/4 lb each)
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon peppered seasoned salt
Instructions:
  • Preheat oven to 350°F and generously spray an 11x7-inch glass baking dish with cooking spray. In a large nonstick skillet over medium-high heat, melt butter. Sauté onion and bell pepper for 2 to 3 minutes until tender. Stir in stuffing mix, corn, chiles, and water. Transfer the flavorful stuffing mixture into the prepared baking dish.
  • Season turkey tenderloins with a generous amount of chili powder and peppered seasoned salt. Lay them on top of the stuffing, gently pressing them in. Grease a sheet of foil with cooking spray and use it to cover the baking dish, making sure the sprayed side is touching the food.
  • Bake uncovered for an additional 10 to 15 minutes, or until the turkey juices run clear when the thickest pieces are cut.
