Spicy, low-fat turkey tacos with a sweet and hot flavor, topped with surprising yams.
Ingredients:
  • 1 yam, peeled and diced
  • 1 tablespoon olive oil
  • 0.75 pound ground turkey
  • 0.5 cup chopped sweet onion
  • 4 jalapeno peppers, seeded and minced
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 0.5 teaspoon Cajun seasoning
  • 0.5 cup tomatillo salsa
  • 0.5 cup chopped fresh cilantro
  • 16 warm flour tortillas
Instructions:
  • Place the diced yam in a microwave-safe bowl and microwave on high until fork-tender, stirring halfway through, for 5 to 7 minutes.
  • In a large skillet over medium heat, crumble and brown the turkey in olive oil for 5 to 7 minutes. Add onion, garlic, and jalapeno; cook until onions caramelize, about 7 to 10 minutes. Season with chili powder, cumin, Cajun seasoning, and salt. Pour salsa over mixture; fold in sweet potatoes. Cook until excess moisture evaporates. Garnish with cilantro and serve with warm tortillas.
