Transform leftover turkey into delicious enchiladas covered in sauce and cheese for a mouthwatering post-Thanksgiving dish.
Ingredients:
  • 2 cups shredded Cheddar-Monterey Jack cheese blend
  • 1 (19 ounce) can red enchilada sauce
  • 1 medium onion, chopped
  • 1 (2 ounce) can sliced black olives
  • 1 tablespoon oil, divided, or more as needed
  • 24 (6 inch) corn tortillas
  • 4 cups cooked turkey, chopped
Instructions:
  • Preheat the oven to 350°F (175°C) and lightly grease a 9x13-inch baking dish before pouring the enchilada sauce into a bowl.
  • In a small bowl, mix together the sharp Cheddar-Jack cheese, diced onion, and sliced black olives.
  • Coat a small skillet with a thin layer of oil and heat over low heat. Cook tortilla until softened, about 15 to 30 seconds per side. Dip in enchilada sauce, place on a plate, add turkey and cheese mixture, roll up, and transfer to baking dish.
  • Continue to form and roll the remaining 11 enchiladas by repeating the process from Step 3, adding more oil as necessary to ensure they cover the base of the baking dish uniformly.
  • Evenly coat the enchiladas with the savory enchilada sauce. Form, roll, and arrange the remaining 12 enchiladas following the same process. Finally, generously spread the remaining sauce over the top and sprinkle with the rest of the flavorful cheese mixture.
  • Bake until the cheese is gooey and bubbly, approximately 20 minutes in the preheated oven.
