Healthier baked enchiladas with ground turkey and fresh ingredients for a satisfying Mexican-inspired meal.
Ingredients:
  • cooking spray
  • 2 teaspoons olive oil
  • 1 pound ground turkey breast
  • 0.5 cup chopped onion
  • 1.5 teaspoons ground cumin
  • 0.25 teaspoon ground chipotle chile pepper, or more to taste
  • 1.5 cups medium radishes, trimmed
  • 2 (10 ounce) cans enchilada sauce (such as Old El Paso®)
  • 16 (6 inch) corn tortillas, warmed
  • 2 tablespoons pepitas (pumpkin seeds)
  • 0.33333334326744 cup coarsely chopped cilantro
  • 2 tablespoons sliced green onion
  • 1 clove garlic, minced
  • 1 teaspoon grated lime zest
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C) and gently coat a 9x13-inch baking dish with cooking spray.
  • In a large nonstick skillet over medium-high heat, heat oil. Add ground turkey and onion, cook for about 5 minutes until turkey is no longer pink and onion is tender. Stir in cumin and chipotle, then remove from heat and let cool slightly before adding 1 cup of Oaxaca cheese.
  • Spread a luxurious 1/4 cup of enchilada sauce in the prepared baking dish. Divide the flavorful turkey mixture evenly among the tortillas. Roll the tortillas tightly and place them in the dish seam side down. Finish off with more of that delicious sauce and a generous 1/2 cup of cheese on top.
  • Cook in the hot oven until the sauce bubbles and the cheese is melted, approximately 20 minutes.
  • Coarsely chop 1 tablespoon pepitas and combine with fresh cilantro, green onion, garlic, and lime zest in a small bowl. Sprinkle this flavorful topping over the enchiladas and add the remaining pepitas right before serving.
