Healthier turkey chilli con carne

Healthy turkey chilli, a family favorite.
Ingredients:
  • 18.20 gm extra virgin olive oil
  • 1 red capsicum, deseeded, finely chopped
  • 1 red onion, finely chopped, plus extra, to serve
  • 1 long fresh green chilli, chopped, plus extra, to serve
  • 3 garlic cloves, finely chopped
  • 500g turkey mince
  • 44.40 gm tomato paste
  • 400g can finely chopped tomatoes
  • 375ml (1 1/2 cups) salt-reduced chicken stock or water
  • 20.00 ml dried oregano
  • 7.50 gm ground cumin
  • 5.00 gm paprika
  • 1 cinnamon stick
  • 400g can black beans, rinsed, drained
  • 2 x pkt Uncle Ben's® Microwave Brown Rice, heated following packet instructions, to serve
  • White corn chips, to serve
  • Greek-style yoghurt, to serve
  • Avocado, sliced, to serve
  • Fresh coriander sprigs, to serve
Instructions:
  • In a large, deep frying pan over high heat, heat the oil until shimmering. Add in the capsicum, onion, chilli, and garlic, then lower the heat to medium-low. Cook, stirring frequently, for about 10 minutes until the vegetables are soft.
  • Turn up the heat to high and add the mince, breaking up any lumps with a wooden spoon, cooking for 5 minutes until the mince changes color. Stir in the tomato paste, then add the tomato, stock or water, oregano, cumin, paprika, and cinnamon. Season with salt and pepper, bring to a boil, then reduce heat to medium-low and simmer for 25 minutes until the liquid reduces. Mix in the beans and cook for 3 minutes until warmed through.
  • Present the chili con carne on a bed of warm brown rice, generously garnished with additional red onion, spicy chili, crunchy corn chips, creamy yogurt, ripe avocado, and fresh coriander.
