Try these quick and delicious turkey meatballs in cranberry sauce for a hearty appetizer option!
Ingredients:
  • 1 lb lean ground turkey
  • 1/2 cup finely chopped onion (1 medium)
  • 1/4 cup uncooked instant white or brown rice
  • 1/4 cup unseasoned dry bread crumbs
  • 1 egg, lightly beaten, or 1/4 cup fat-free cholesterol-free egg product
  • 1 teaspoon salt, if desired
  • 1/2 teaspoon poultry seasoning
  • 1 can (16 oz) jellied cranberry sauce
  • 1/2 cup water
Instructions:
  • Combine all ingredients in a medium bowl, excluding cranberry sauce and water. Form the mixture into approximately 45 (1-inch) balls.
  • Preheat a nonstick skillet over medium heat. Cook the meatballs covered for 8 to 10 minutes, turning occasionally, until the internal temperature reaches 165°F.
  • Fold in cranberry sauce and water with a gentle touch. Simmer over medium-low heat for 3 to 4 minutes, stirring occasionally, until the cranberry sauce is velvety and smooth.
