Succulent turkey meatballs infused with herbs and sour cream, paired with juicy tomatoes and basil. Perfect as a main or appetizer.
Ingredients:
  • Meatballs
  • 1 1/2 pounds ground turkey (thigh meat if available)
  • 1/2 cup sour cream
  • 1 egg
  • 1/2 cup bread crumbs
  • 2 teaspoons kosher salt
  • 2 tablespoons fresh basil, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon fennel seeds
  • 2 teaspoons fresh rosemary, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon red pepper flakes
  • 1/3 cup flour, for dredging
  • Sauce
  • 1/4 cup extra virgin olive oil
  • 1/2 jalapeno chile, seeded, minced
  • 2 large garlic cloves, minced
  • 3 tablespoons white wine or chicken stock
  • 1 1/2 pounds fresh tomatoes, roughly chopped (can substitute a 28-ounce can of crushed tomatoes)
  • 1/4 cup fresh basil, thinly sliced
Instructions:
  • Prepare the turkey meatball mix by combining turkey, breadcrumbs, sour cream, egg, minced basil, salt, rosemary, oregano, thyme, fennel seeds, and red pepper flakes in a large bowl. Gently mix the ingredients together by hand.
  • Prepare the meatballs: Shape them to a size of 1 1/2 to 2 inches using your hands, then coat them in flour by rolling them in a shallow bowl or plate. Place the coated meatballs on a plate or tray, resulting in approximately 18 to 22 meatballs.
  • Sear the turkey meatballs in olive oil: Heat olive oil in a large sauté pan over medium-high heat. Place meatballs in the pan without crowding. Cook on medium-low heat, turning at least 3 times until browned and cooked through, about 10 minutes per batch. Use a fork to rotate meatballs for even browning. Transfer to a bowl using a slotted spoon.
  • Create a flavorful base: Sauté jalapeño and garlic in a pan for 1 minute. Pour in white wine or chicken stock, then simmer on high heat until the liquid reduces enough for a wooden spoon to leave a visible trail when scraped along the pan's bottom.
  • Place meatballs back in pan, coat in sauce. Add fresh tomatoes, cook for 4 minutes until slightly softened. Remove from heat, stir in fresh basil.
  • Top with freshly grated cheese: Sprinkle with your choice of fresh mozzarella or Parmesan. Enjoy on its own or as a perfect pairing with pasta, rice, or in a sandwich roll.
