Elevate turkey meatballs with basil pesto, Parmesan, and serve with pasta and sauce for a gourmet twist!
Ingredients:
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 1 clove garlic, minced
  • 1 cup frozen spinach
  • 1 pound lean ground turkey
  • 0.33333334326744 cup pesto
  • 2 egg whites
  • 1.5 (1 ounce) packets plain instant oatmeal
  • 0.25 cup grated Parmesan cheese
Instructions:
  • Prepare your oven by preheating it to a toasty 375 degrees F (190 degrees C) and generously coat a spacious baking pan with cooking spray.
  • In a large skillet over medium heat, sizzle the olive oil before tossing in the onion and garlic. Sauté until they turn golden, for about 5 minutes. Introduce the spinach next and stir until it wilts entirely, which should take about 3 to 5 minutes.
  • While you wait, mix together turkey, pesto, egg whites, oatmeal, Parmesan cheese, salt, and pepper in a large bowl. Stir in the onion-spinach mixture until well combined. Use an ice cream scoop to form mixture into balls and place them on the prepared pan.
  • Roast in the hot oven until fully cooked through, for about 30 to 35 minutes.
