Asian turkey meatballs with cilantro, scallions, soy sauce, and sesame oil, paired with a sweet soy dipping sauce.
Ingredients:
  • 1 pound ground turkey
  • 0.5 cup minced cilantro
  • 0.5 cup dry bread crumbs
  • 1 egg, lightly beaten
  • 2 scallions, minced
  • 1 tablespoon vegetable oil
  • 1 tablespoon sesame oil
  • 2 tablespoons soy sauce
  • 2 slices fresh ginger, or more to taste
  • 0.25 cup brown sugar
  • 0.25 cup soy sauce
  • 1 tablespoon rice vinegar
Instructions:
  • Preheat the oven to a toasty 400 degrees F (200 degrees C) and prepare a lined baking sheet with parchment paper.
  • For the meatballs: In a large bowl, blend turkey, cilantro, bread crumbs, egg, scallions, vegetable oil, sesame oil, and soy sauce. Use your hands to gently mix until combined. Roll mixture into tablespoon-sized balls between your palms and place them on a baking sheet.
  • Bake in a hot oven for 20-25 minutes until golden brown and internal temperature reaches 165°F (74°C) when tested with a thermometer.
  • As the meatballs cook, prepare the dipping sauce: Smash ginger using the back of a knife and transfer to a small saucepan. Combine brown sugar, soy sauce, and rice vinegar in the saucepan. Cook over medium-low heat, stirring occasionally, until the sugar dissolves, approximately 3 minutes. Continue to simmer, stirring regularly, until the sauce slightly thickens, around 3 minutes. Remove the ginger and transfer the sauce to small serving cups.
  • Present meatballs with sauce for dipping, and provide toothpicks for easy serving.
