Teriyaki turkey meatball and soba stir-fry

Delight the family with turkey meatball and soba stir-fry.
Ingredients:
  • 3 green onions
  • 500g turkey mince
  • 187.50 ml fresh breadcrumbs
  • 270g packet soba noodles
  • 18.40 gm vegetable oil
  • 1 large carrot, cut into matchsticks
  • 2 garlic cloves, thinly sliced
  • 3cm piece fresh ginger, cut into matchsticks
  • 165.00 ml teriyaki sauce
  • 125g baby spinach
  • 12.00 gm sesame seeds, toasted
  • Lemon wedges, to serve
Instructions:
  • Slice half of the onion thinly, then finely chop the remaining half. Mix the minced meat, breadcrumbs, egg, and finely chopped onion in a bowl. Season with salt and pepper. Roll the mixture into balls using clean hands.
  • Prepare noodles according to package instructions until they are tender. Save 1/2 cup of the cooking water. Rinse the noodles with cold water and drain thoroughly.
  • Heat a wok over medium-high heat, then add half of the oil. Swirl to coat and cook the meatballs in batches for 4 to 5 minutes until they are browned all over. Transfer to a plate.
  • Heat the remaining oil in a wok over high heat. Add carrot, garlic, and ginger, and stir-fry for 1 to 2 minutes until the carrot is just tender. Add the sauce, reserved cooking water, and meatballs, then stir-fry for 2 to 3 minutes until the meatballs are cooked through.
  • Combine fresh spinach leaves, sliced onion, and noodles in the pan. Stir-fry delicately for 1 to 2 minutes until everything is warmed. Sprinkle with sesame seeds and serve with lemon wedges.
