Turkey Mushroom Gravy

Indulgent slow-cooked turkey gravy with mushrooms is a crowd pleaser.
Ingredients:
  • 2 cups unsalted butter
  • 1 pound portobello mushrooms, wiped clean with paper towels
  • 2 pounds whole white mushrooms, wiped clean with paper towels
  • 1 cup all-purpose flour
  • 4 (14.5 ounce) cans chicken broth
  • 1.5 cups turkey pan drippings
  • 2 cups chopped onions
  • 1 cup chopped celery
  • 0.25 teaspoon cayenne pepper
Instructions:
  • In a large stock pot over medium-low heat, melt butter until clear and add mushrooms. Cook until mushrooms are browned, about 1 to 1 1/2 hours. Remove, chop, and set mushrooms aside. Keep about 1 cup of butter in the pot. Whisk flour into the pot and cook until it turns a mahogany brown color, about 20 minutes. Slowly whisk in chicken broth and bring to a simmer to thicken the stock.
  • In a saucepan, heat turkey drippings and sauté onions and celery until onions start to brown, about 20 minutes. Add thickened stock, bring to a gentle boil, then simmer for 20 minutes. Stir in mushrooms and season with salt, black pepper, and cayenne pepper to taste.
