Veggie-packed turkey mince subs are ready in 25 minutes.
Ingredients:
  • 1 small zucchini, grated
  • 500g turkey mince
  • 40.00 ml chopped fresh chives
  • 80g feta, crumbled
  • 450g (3 cups) frozen baby peas
  • 20.00 gm bought basil pesto
  • 4 long crusty bread rolls
  • 120g pkt baby spinach and rocket
  • 40.00 ml dried cranberries
  • 20.00 ml toasted pine nuts
  • 20.00 ml balsamic glaze
Instructions:
  • Drain the grated zucchini in a colander, gently squeeze out any excess moisture, and then combine it in a large bowl with turkey, chives, and 30g feta. Season the mixture and form twelve 2cm-thick patties.
  • Using a large non-stick frying pan, lightly coat it with oil spray and heat over medium heat. Cook the patties for 3 minutes on each side until they are golden brown and fully cooked.
  • Boil the peas in a large saucepan, then cook for 3 minutes until tender. Drain and return to the pan. Mash the peas with a potato masher or fork to keep some texture, then mix in the pesto and the rest of the feta. Season to taste.
  • Make a slit down the center of the rolls without cutting all the way through. Add spinach, rocket, patties, pea mixture, cranberries, and pine nuts on top. Finish with a drizzle of balsamic before serving.
