Transform Christmas turkey leftovers into a delicious pasta masterpiece.
Ingredients:
  • 400g spaghetti
  • 200g cherry tomatoes, halved
  • 200g shredded cooked turkey breast meat
  • 100g baby spinach
  • 195g pesto
  • shaved parmesan, to serve
Instructions:
  • Boil pasta in a large saucepan of salted water until al dente following packet instructions. Drain and return to the covered pan to keep warm.
  • Shred the turkey meat into small pieces and combine with hot pasta, pesto, baby spinach, tomatoes, salt, and pepper. Top with shaved Parmesan and serve with crusty bread.
