Whip up this delicious turkey leftover soup using frozen veggies for a quick, low-calorie, and healthy meal!
Ingredients:
  • 4 cups chicken broth
  • 1 cup water
  • 0.25 teaspoon rosemary
  • 0.25 teaspoon black pepper
  • 1 (10 ounce) package frozen mixed vegetables
  • 1 (6 ounce) box long grain white rice and wild rice, fast cooking
  • 2 cups cooked turkey, chopped
  • 2 (14.5 ounce) cans RED GOLD® Petite Diced Tomatoes
Instructions:
  • In a large soup kettle, mix the broth, water, rosemary, and black pepper. Bring to a boil, then stir in the mixed vegetables, rice from the box, and the seasoning packet.
  • Bring the mixture back to a boil then lower the heat. Cover and let it simmer for 10 to 15 minutes until the vegetables and rice are tender. Add turkey and tomatoes, heat through, and finish with a sprinkle of black pepper.
