Turkey Stew with Peppers and Mushrooms

Savory turkey stew in a creamy, tangy yogurt-tomato sauce with onions, garlic, bell peppers, and mushrooms.
Ingredients:
  • 4 tablespoons extra virgin olive oil
  • 1 large (2 cups) onion, sliced
  • 2 to 4 bell peppers, various colors, sliced thinly
  • 2 large cloves garlic, minced
  • A few dashes cayenne pepper
  • 1 tablespoon paprika
  • 1 1/2 to 2 pounds skinless, boneless turkey thigh or breast, cut into large chunks
  • 4 ounces mushrooms, sliced
  • 1 14-ounce can plum tomatoes with juice
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon lemon juice
  • 1 teaspoon fresh rosemary, minced
  • Freshly ground black pepper to taste
  • Salt
  • 2 teaspoons cornstarch
  • 3/4 cup plain (full fat is best, anything less will likely curdle*) yogurt
Instructions:
  • In a large sauté pan over high heat, warm 2 tablespoons of olive oil. Sauté the onions and peppers until they soften and slightly brown. Add paprika and garlic, cook for 30 seconds until fragrant. Set aside the mixture of peppers, onions, and garlic.
  • Heat 2 tablespoons of oil in a pan over high heat. Sauté mushrooms and turkey until browned, about 3-4 minutes, stirring often. Reduce heat to medium, add peppers and onions back to the pan, and mix well.
  • Squeeze the tomatoes to break them up, then add them along with their juices into the pan. Pour in Worcestershire sauce, lemon juice, rosemary, and black pepper. Stir everything together, lower the heat to medium-low, cover, and let it simmer for 15-20 minutes.
  • Combine cornstarch with yogurt: Mix the cornstarch into the yogurt before adding it to the stew. Cook on low heat, stirring occasionally until the sauce slightly thickens. Serve alongside rice, polenta, or mashed potatoes. Enjoy with Turkey and Sweet Potato Soup from Kalyn's Kitchen.
