Quick and delicious five-ingredient turkey taco bowls ready in 15 minutes. Customize by serving over rice or other favorite grains.
Ingredients:
  • 2 tablespoons olive oil
  • 1 pound ground turkey
  • 1 (1-ounce) envelope taco seasoning mix (2 tablespoons)
  • 1/2 cup water
  • 1/4 teaspoon kosher salt
  • 2/3 cup chopped fresh cilantro (from 1 bunch), divided
  • 2 (8.8-ounce) package precooked microwavable white rice, heated according to package directions
  • 4 ounces queso fresco, crumbled (about 1 cup)
  • Shredded lettuce, optional for serving
  • Thinly sliced radishes for serving, optional
Instructions:
  • Sear the turkey in a large nonstick skillet with hot oil, breaking it up with a wooden spoon until fully cooked, approximately 5 minutes. Mix in taco seasoning, water, and salt, stirring until well combined, around 1 minute. Take off heat and gently fold in 1/2 cup of cilantro.
  • Prepare the taco bowls: Distribute the rice and optional shredded lettuce evenly into four bowls. Add turkey mixture, queso fresco, the rest of the cilantro, and thinly sliced radishes (if desired) on top. Allow the turkey and rice to reach room temperature before placing them in an airtight container. Refrigerate for up to 3 days. Reheat in a skillet until warmed through. Enjoy the dish?
