Delicious turkey tetrazzini: a comforting casserole with tender turkey, creamy sauce, and veggies. Ideal for using up leftovers.
Ingredients:
  • 12 ounces mushrooms, sliced (about 4 to 5 cups)
  • 8 tablespoons unsalted butter, divided
  • 1/4 cup all-purpose flour
  • 12 ounces egg noodles, spaghetti, linguini or other pasta
  • 1 1/2 cups milk
  • 1/4 cup heavy cream
  • 2 cups chicken broth
  • 1/4 cup dry sherry (or vermouth or dry white wine)
  • 3 cups coarsely chopped cooked turkey
  • 1 cup peas
  • 2/3 cup freshly grated Parmesan, divided
  • 1/3 cup shredded Swiss cheese
  • 2 tablespoons lemon juice
  • Kosher salt and freshly ground pepper
  • Ground nutmeg (optional)
  • 1/3 cup fine fresh bread crumbs (or panko)
  • Freshly chopped parsley for garnish (optional)
Instructions:
  • Preheat the oven to 375 degrees Fahrenheit for the perfect cooking temperature.
  • Cook the pasta in a pot of boiling salted water until al dente as per package directions. Drain and set aside.
  • In a large skillet over medium-high heat, melt 3 tablespoons of butter. Sauté the mushrooms until all the liquid has evaporated, for 5 to 7 minutes. Set aside.
  • Create a flavorful roux by melting 4 tablespoons of butter in a large, heavy saucepan. Stir in the flour and cook the mixture over low heat, stirring constantly, for 3 minutes.
  • Create a velvety sauce by gently whisking milk, cream, chicken broth, and sherry into a saucepan with butter and flour. Simmer over medium-low heat, stirring constantly, for 5 to 8 minutes until perfectly smooth.
  • Combine pasta, sauce, mushrooms, turkey, peas, 1/3 cup Parmesan, Swiss cheese, and lemon juice in a large bowl. Season with salt, pepper, and nutmeg as needed. Adjust salt if using unsalted broth. Transfer to a buttered 3-quart casserole dish.
  • Prepare the topping: Mix together 1/3 cup Parmesan with breadcrumbs in a small bowl. Sprinkle the mixture evenly over the tetrazzini and top with 1 tablespoon of butter cut into bits. Enjoy the dish and don't forget to rate and comment below!
