Ingredients:
  • 200g vermicelli noodles
  • 375.00 ml cooked turkey, shredded
  • 200g red cherry tomatoes, halved
  • 1 small red onion sliced
  • 24.40 gm fish sauce
  • 44.00 gm sweet chilli sauce
  • 62.50 ml of whole coriander leaves
  • 40.00 ml of shredded mint
  • 40.00 ml chopped roasted cashews
Instructions:
  • Add the vermicelli noodles to a large heatproof bowl and pour boiling water over them. Let them soak for 5 minutes, then drain thoroughly and allow to cool.
  • In the meantime, combine the turkey, tomatoes, and onion in a bowl and set aside.
  • Combine fish sauce and sweet chili sauce in a small bowl, whisk together to make the dressing.
  • Mix together the noodles, turkey mixture, coriander, and mint.
  • Drizzle the salad with the dressing, mix well to ensure everything is coated. Divide the noodle salad evenly into serving bowls and top with cashews. Garnish with lime wedges before serving.
