Delicious meatloaf cups with turkey, couscous, veggies. Easy, perfect individual servings.
Ingredients:
  • cooking spray
  • 2 cups coarsely chopped zucchini
  • 1.5 cups coarsely chopped onions
  • 1 red bell pepper, coarsely chopped
  • 1 pound extra lean ground turkey
  • 0.5 cup uncooked couscous
  • 1 large egg
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon Dijon mustard
  • 0.5 cup barbecue sauce, or as needed
Instructions:
  • Preheat the oven to 400 degrees F (200 degrees C) and lightly grease 20 muffin cups with cooking spray.
  • In a food processor, pulse zucchini, onions, and red bell pepper until finely chopped but not pureed. Transfer the veggies to a bowl and mix in ground turkey, couscous, egg, Worcestershire sauce, and Dijon mustard until well combined.
  • Evenly distribute the batter in each muffin cup, filling them 3/4 full. Drizzle each muffin with a teaspoon of tangy barbecue sauce.
  • Roast in the oven until the juices run clear, for approximately 25 minutes. Use an instant-read thermometer to check that the center of the muffins reaches at least 165 degrees F (74 degrees C). Allow it to sit for 5 minutes before serving.
