Make homemade rose-flavored Turkish delight, a delightful treat perfect with Turkish coffee or tea. Easy to make and great for gifting.
Ingredients:
  • 1/4 cup cornstarch
  • Sugar syrup:
  • 4 cups (800g) sugar
  • 1 tablespoon lemon juice
  • 1 teaspoon finely grated lemon zest
  • 1 1/2 cups water
  • Cornstarch paste:
  • 1 cup (125g) cornstarch
  • 1 teaspoon cream of tartar
  • 2 cups water
  • Flavoring and color:
  • 1 1/2 tablespoons rose water
  • 1 teaspoon vanilla extract
  • 2 drops pink or red food coloring
  • Finishing:
  • 1/2 cup powdered sugar
Instructions:
  • Grease an 8x8-inch metal pan with neutral oil or cooking spray, line it with parchment paper, then lightly oil or spray the lining. Set aside.
  • Prepare the sugar syrup: Combine sugar, lemon juice, zest, and 1 1/2 cups of water in a medium saucepan over low heat until sugar dissolves. Increase heat, cover, and bring to a boil. Boil covered for 5 minutes to dissolve any sugar crystals. Uncover, insert candy thermometer, and boil until reaching 240°F to 250°F, around 7-10 minutes, until golden in color.
  • Prepare the cornstarch paste: In a large pot or saucepan over medium heat, combine cornstarch, cream of tartar, and 2 cups of water. Whisk until a thick paste forms, about 3-5 minutes. Remove from heat and set aside while the sugar syrup boils.
  • Slowly and carefully incorporate the hot sugar syrup into the cornstarch paste on low heat until fully combined, ensuring a smooth texture with no lumps.
  • Gently simmer the mixture over low heat for 1 hour, stirring occasionally with a wooden spoon. Look for the mixture to thicken and turn golden in color, indicating readiness.
  • Enhance with aroma and vibrancy: Once the mixture has thickened, introduce the vanilla extract, rose water, and food coloring. Stir thoroughly until well combined. Remove from heat.
  • Pour the hot mixture into the lined dish, spreading it into the corners using the back of an oiled spoon. Be cautious as the mixture is very hot. Allow it to set overnight in a dry place, uncovered.
  • Prepare and store the Turkish delight: In a large bowl, sift 1/2 cup of powdered sugar and 1/4 cup of cornstarch. Sprinkle some of the mixture on your work surface, transfer the Turkish delight, remove the parchment, and sprinkle more mixture on top. Grease a pizza cutter with neutral oil, cut the slab into 6 strips, then cut each strip into 6 squares for a total of 36. Coat the squares in the powder mixture in the bowl. Serve immediately or store in an airtight container in a cool, dry place for up to 1 week. Enjoy!
