Turkish dumplings

Ingredients:
  • 1 small brown onion, grated
  • 200g lean lamb mince
  • 40.00 ml chopped fresh mint leaves
  • 2.50 gm sweet mild paprika
  • 1 tsp sumac
  • 20 wonton wrappers
  • Small fresh mint leaves, to serve
  • Sweet mild paprika, to serve
  • 62.50 ml Greek Style Yoghurt
  • 2 garlic cloves, crushed
Instructions:
  • Combine onion, minced meat, fresh mint, paprika, sumac, salt, and pepper in a bowl and mix thoroughly.
  • Lay out half of the wonton wrappers. Fill each wrapper with a heaped teaspoon of the mince mixture in the center. Moisten edges with cold water, then fold 2 opposite corners together, pressing to seal and enclose the filling. Repeat the process with the remaining wrappers and mince mixture.
  • Steam the dumplings in batches over simmering water for 4 to 5 minutes until fully cooked. Transfer to a plate and cover to keep warm.
  • To prepare the yogurt sauce, combine yogurt, garlic, and 1 1/2 tablespoons of cold water in a bowl. Mix well. Drizzle the sauce over the dumplings, then garnish with fresh mint leaves and a sprinkle of paprika before serving.
