Delicious Turkish parsley and feta cheese snack, great for breakfast or a quick bite.
Ingredients:
  • 3 teaspoons active dry yeast
  • 1.5 teaspoons white sugar
  • 2 tablespoons warm milk
  • 1 cup all-purpose flour, or more as needed
  • 1 cup whole wheat flour
  • 0.5 cup warm water, or more as needed
  • 0.25 cup vegetable oil
  • 0.5 teaspoon salt
  • 1 teaspoon salted butter, or as needed
  • 1 cup crumbled feta cheese
  • 0.5 bunch fresh parsley, chopped
  • 1 teaspoon salt
  • 0.5 teaspoon ground black pepper
  • 0.5 teaspoon chili powder
  • 2 tablespoons milk, or as needed
  • 1 teaspoon poppy seeds, or to taste
Instructions:
  • Combine yeast and sugar in warm milk in a bowl. Allow the mixture to sit until the yeast softens and a creamy foam forms, approximately 5 minutes.
  • In the bowl of a stand mixer fitted with the hook attachment, blend together 1 cup all-purpose flour, 1 cup whole wheat flour, 1/2 cup water, vegetable oil, salt, and yeast mixture until the dough is smooth and slightly tacky. Adjust consistency by adding more flour if needed, or a touch of warm water if too firm. Cover with a damp cloth and allow to rest at room temperature for 45 to 50 minutes.
  • Preheat the oven to 350°F (175°C) and generously butter a baking tray.
  • Combine the feta cheese, parsley, salt, pepper, and chili powder in a bowl, mixing thoroughly until fully incorporated.
  • After kneading the dough for 2 minutes, divide it into 12 equal portions and shape each into a ball. Flatten each ball into a 2- to 3-inch circle using your hands or a rolling pin. Place a spoonful of cheese filling in the center, then fold the edges upward to create a bundle, pressing to seal. Arrange the bundles on a baking tray with the folded sides down. Brush with milk and sprinkle with poppy seeds before baking.
  • Bake on the top oven rack until beautifully golden, for about 30-32 minutes.
