Turmeric and cashew pilaf

Sultana and cashew basmati pilaf: A flavorful and vibrant side dish for Indian meals.
Ingredients:
  • 18.40 gm vegetable oil
  • 1 brown onion, finely chopped
  • 500g Brand Basmati rice, rinsed, drained
  • 1 tsp ground turmeric
  • 27.20 gm Brand Sultanas
  • 125.00 ml cashews, toasted
  • Coriander sprigs, to serve
Instructions:
  • In a large saucepan, heat oil over medium heat. Sauté onion for 5 minutes until soft. Add rice and turmeric, stir to coat. Pour in 800ml water, add sultanas, and bring to a boil over high heat. Season with salt, cover, reduce heat to low, and cook undisturbed for 12 minutes until rice is tender and liquid is absorbed.
  • Fluff the mixture with a fork in a bowl, then garnish with cashews and coriander.
