Roasted honey turmeric chicken: Easy weeknight elegance, perfect for guests too!
Ingredients:
  • Vegetable or olive oil, for the baking dish
  • 1 tablespoon ground turmeric
  • 1 teaspoon ground ginger
  • 1 teaspoon crushed coriander seed (or ground coriander)
  • 4 tablespoons honey
  • 1 tablespoon soy sauce
  • 2 small yellow onions, sliced
  • 1 (3-1/2 pound) chicken, spatchcocked
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper
  • Juice from 1 lemon (about 3 tablespoons)
  • 1 tablespoon olive oil
Instructions:
  • Preheat the oven to 375ºF and prepare a large baking dish or ovenproof skillet by lightly oiling it. Combine turmeric, ginger, and coriander in a small bowl. In a separate small bowl, mix honey and soy sauce together. Set aside.
  • Prepare the chicken: Layer the onions evenly at the bottom of the baking dish or skillet. Season both sides of the chicken with salt and pepper, then place it on top of the onions with the breast-side up. Drizzle the chicken with lemon juice and olive oil, then generously sprinkle the spices over it. Add any remaining bits of crushed coriander over the chicken for extra flavor.
  • Bake the chicken until golden and juicy for 40 minutes.
  • Enhance the chicken: Take the chicken out of the oven, baste it with the honey and soy sauce blend, then oven-roast for an additional 10 to 15 minutes until the internal temperature reaches 165oF. Rest the chicken for 10 minutes before serving.
  • Prepare and Arrange: Place the chicken on a cutting board and divide it into 8 pieces - 4 breast pieces, 2 thighs, and 2 drumsticks. Use a slotted spoon to move the onions onto a serving platter, then place the chicken pieces on top. Pour the flavorful pan juices into a small pitcher and serve alongside the chicken.
