Tuscan potato, basil & caramelised onion salad

Easy and flavorful side dish with only 6 ingredients.
Ingredients:
  • 3 x 400g pkts Baby Potatoes
  • 36.40 gm olive oil
  • 4 large red onions, peeled, halved, cut into thick wedges
  • 2 bunches fresh basil, leaves picked, torn
  • 1 large lemon
  • 85g (1/3 cup) whole-egg aioli
Instructions:
  • Prepare the potatoes according to the package instructions, then allow them to cool slightly before cutting them in half.
  • In a large non-stick frying pan over medium heat, heat the oil and cook the onion and potato until the onion is soft and the potato is golden, about 10-12 minutes. Transfer to a large bowl and let it cool to room temperature for about 30 minutes. Add the basil and toss to combine.
  • Zest the lemon using a zester or vegetable peeler and a small sharp knife to create thin strips. Then, cut the lemon in half and squeeze out the juice. In a small bowl, combine the aïoli, lemon zest, and lemon juice, and season with salt and pepper. Drizzle the mixture over the salad.
