Elevate potato chips with a sprinkle of Parmesan for a gourmet touch.
Ingredients:
  • 60ml olive oil
  • 4 pontiac or desiree potatoes, peeled, cut into thick chips
  • 50g plain flour
  • 125.00 ml grated parmesan
  • Rosemary leaves, to serve
Instructions:
  • Preheat the oven to 200°C for a perfect bake.
  • Drizzle olive oil in a large roasting pan and heat in the oven.
  • Place the potato chips in a saucepan of salted cold water. Bring to a boil and cook for 3 minutes. Drain well, then return to the hot saucepan and shake to dry.
  • In a plastic bag, combine plain flour and parmesan, season with salt and freshly ground black pepper. Add hot chips, toss to coat well.
  • Carefully lay the chips over the base of the hot roasting pan. Roast in the oven for 10 minutes, flip them, and continue cooking for 10-15 minutes until crispy and golden brown.
  • Place the chips on a paper towel to remove excess oil.
  • Coat the chips thoroughly with fragrant rosemary leaves and a sprinkle of sea salt, and enjoy right away.
