Quick and satisfying pork dinner made with flavorful Muir Glen® tomatoes, ready in just 30 minutes for Italian lovers.
Ingredients:
  • 1/4 cup Gold Medal™ all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 egg
  • 4 boneless pork chops, 1 inch thick (about 1 3/4 lb)
  • 2 tablespoons olive oil
  • 2 teaspoons finely chopped garlic
  • 1 can (14.5 oz) Muir Glen™ organic diced tomatoes, undrained
  • 1/3 cup chicken broth
  • 1/4 cup balsamic vinegar
  • 2 tablespoons thinly sliced fresh basil leaves
  • 1 tablespoon capers
Instructions:
  • Combine flour, salt, and pepper in one dish. Beat the egg in another dish. Dip the pork chops in the egg, then coat them with the flour mixture.
  • In a large nonstick skillet over medium-high heat, heat oil. Cook the pork chops for 2 to 3 minutes on each side until they are golden brown. Remove the pork from the skillet and set it aside.
  • In a skillet, quickly sauté garlic for 1 minute while stirring constantly. Add tomatoes, broth, vinegar, basil, and capers, then put the pork chops back in. Bring to a boil, then reduce heat to a simmer for 13 to 15 minutes until pork is fully cooked and reaches 160°F when tested in the center.
  • Spoon the flavorful tomato mixture over the succulent pork chops for a lovely presentation.
