Twice Baked Cheesy Potatoes

Whipped sour cream, butter, and cheese stuffed inside crispy baked potato skins.
Ingredients:
  • 5 potatoes
  • 4 ounces American cheese, sliced into strips
  • 1 tablespoon butter
  • 0.75 cup sour cream
Instructions:
  • Preheat the oven to 350°F (175°C).
  • Bake potatoes until tender, about 1 hour.
  • Combine cheese and butter in a microwave-safe bowl. Microwave for 1 1/2 minutes until melted. Stir in sour cream until well combined.
  • Halve the potatoes and carefully scoop out the insides without tearing the skins. Combine with cheese mixture and mix until smooth.
  • Place the savory potato mixture back into the shells and bake at 350°F (175°C) for 10 minutes until golden.
