Twisted Chicken Salad with Tostadas

Spicy chicken salad with jalapenos, best served on tostadas for a delicious kick.
Ingredients:
  • vegetable oil for frying
  • 10 corn tortillas
  • 1 (10 ounce) can chunk chicken, drained and flaked
  • 0.5 cup mayonnaise
  • 2.5 tablespoons canned jalapeno pepper slices, undrained
  • 1 tablespoon pickled jalapeno pepper juice
Instructions:
  • In a large heavy skillet over medium-high heat, warm oil. Add tortillas one by one into the hot oil. If a tortilla puffs up, press it down with a fork. Once crisp and golden, place on paper towels. Repeat with the rest of the tortillas.
  • In a bowl, use a fork to shred the chicken and mix in the mayonnaise. Dice the jalapenos (keeping the liquid) and stir into the chicken salad. Add 1 tablespoon of jalapeno juice, season with salt and pepper, and mix thoroughly. Spread the chicken salad on the tostadas to serve.
