Flavorful chili made with venison, Italian sausage, and a sweet, smoky, spicy veggie mix.
Ingredients:
  • 2 tablespoons olive oil, divided
  • 2 pounds ground venison
  • 1.5 pounds bulk mild Italian sausage
  • 0.25 cup butter
  • 1 large sweet onion, chopped
  • 1 jalapeno pepper, seeded and chopped
  • 3 teaspoons minced garlic
  • 2 (14 ounce) cans stewed tomatoes, chopped
  • 6 tablespoons chili powder
  • 4 teaspoons beef bouillon granules
  • 2 teaspoons liquid smoke flavoring
  • 1.5 teaspoons ground cumin
  • 1.5 teaspoons cayenne pepper
  • 0.5 teaspoon ground allspice
  • 2 (12 fluid ounce) cans or bottles Pilsner-style beer
  • 1 (16 ounce) can light red kidney beans, rinsed and drained
  • 1 (16 ounce) can dark red kidney beans, rinsed and drained
  • 1 (8 ounce) can tomato sauce
  • 0.25 cup bourbon
Instructions:
  • In a skillet over medium-high heat, sizzle 1 tablespoon of olive oil. Cook venison until nicely browned and crumbly, about 5 to 7 minutes. Drain and discard any excess grease.
  • In a separate skillet, heat the remaining olive oil over medium-high heat. Cook and stir the sausage until browned and crumbly, about 5 to 7 minutes. Drain off the grease, then add the sausage to the large pot with the venison.
  • In a skillet over medium heat, melt butter. Cook onion, jalapeno, and garlic until softened, stirring occasionally, for 5 to 7 minutes. Transfer the mixture to a food processor and pulse briefly. Then, add it to the meat mixture.
  • In a food processor, gently blend tomatoes and combine with the meat mixture. Add chili powder, beef bouillon, liquid smoke, cumin, cayenne, and allspice, stirring between each addition. Mix in beer, kidney beans, tomato sauce, and bourbon.
  • Bring the chili mixture to a lively boil, then lower the heat and allow it to simmer until it thickens and reduces, approximately 1 hour.
