Fluffy pancakes with a heavenly choc-hazelnut drizzle.
Ingredients:
  • 435ml milk
  • 1 Free Range Egg
  • 300g self-raising flour
  • 55g caster sugar
  • 0.63 gm bicarbonate of soda
  • 20g butter, melted
  • 95g chocolate chips
  • 25.00 gm cocoa powder
  • 60ml milk
  • Whipped cream, to serve
  • Sliced banana, to serve
  • Chopped hazelnuts, toasted, to serve
  • 100g dark chocolate, coarsely chopped
  • 125ml thickened cream
  • 110g hazelnuts
Instructions:
  • Combine the milk and egg in a large container, whisking until smooth.
  • In a large bowl, mix flour, sugar, and bicarbonate of soda. Create a well in the center. Pour the milk mixture into the flour mixture and whisk until a smooth batter forms. Cover with plastic wrap and let it rest for 30 minutes.
  • Preheat a large non-stick frying pan over medium-low heat and brush with melted butter. Pour ¼ cup (60ml) of batter into the pan, sprinkle with chocolate chips, and cook for about 2 minutes until bubbles form on the surface. Flip and cook for another minute until golden. Transfer to a plate, cover with foil to keep warm. Repeat to make 4 more pancakes.
  • Stir in 1 tablespoon of cocoa powder and 1 tablespoon of extra milk into the remaining batter. Brush the pan with melted butter. Cook 5 additional pancakes with half of the remaining batter, adding chocolate chips. Finally, whisk the remaining cocoa powder and extra milk into the rest of the batter and cook the final 5 pancakes with chocolate chips.
  • Combine the leftover cocoa powder and extra milk into the remaining batter. Make 5 additional pancakes with the remaining batter and chocolate chips.
  • In a small saucepan over low heat, combine the chocolate, cream, and Coles Smooth Hazelnut Spread. Stir and cook until the chocolate is melted and the sauce is smooth.
  • Plate the pancakes. Add a dollop of cream and sliced banana. Drizzle with chocolate hazelnut sauce and sprinkle with chopped hazelnuts.
