Quick and tasty prawn roll with fresh herbs and greens, ideal for dinner.
Ingredients:
  • 1 bunch radishes, trimmed, thinly sliced
  • 60ml rice wine vinegar
  • 2 spring onions, thinly sliced lengthways
  • 100g mayonnaise
  • 1 tsp horseradish cream
  • 20.00 ml chopped dill (optional)
  • 4 Turkish rolls, split
  • 1 oak leaf lettuce, leaves separated
  • 2 ripe avocados, stoned, peeled, sliced
  • 1kg Cooked Whole Tiger Prawns, peeled, deveined
Instructions:
  • Combine the radish and vinegar in a small bowl. Let it marinate for 30 minutes to enhance the flavors. Drain before using.
  • In a bowl, submerge the spring onion in ice water and let it rest for 10 minutes until it curls. Then, drain the spring onion before using.
  • Combine tangy mayonnaise with zesty horseradish cream and fragrant dill. Spread the mixture onto the cut sides of the rolls. Pile with crisp lettuce, crunchy radish, creamy avocado, succulent prawns, and delicate spring onion curls. Season generously with freshly ground pepper.
