Quick and flavorful veggie burrito for busy days.
Ingredients:
  • 250g packet microwave brown rice
  • 400g can red kidney beans, drained, rinsed
  • 40g sachet Spice Mix
 for Burritos
  • 82.50 gm vegan cream cheese
  • 80.00 ml chopped fresh coriander leaves
  • 6 Jumbo Tortillas (see note)
  • 125.00 ml Thick N Chunky Salsa Mild
  • 300g can corn kernels, drained
  • 165.00 ml finely shredded red cabbage
  • 125.00 ml roasted red capsicum, sliced
  • 1 large carrot, grated
Instructions:
  • Prepare rice as directed on the package. Transfer the cooked rice to a bowl and gently fold in the beans, spice mix, and cream cheese until well mixed.
  • Follow the package directions to warm the tortillas. Lay them out on a clean surface. Spread salsa down the middle of each tortilla. Add rice mixture, corn, cabbage, bell peppers, carrots, and coriander on top. Roll them up, tucking in the sides. Lightly spray the rolls with oil.
  • Preheat a large frying pan over medium heat. Cook the burritos in batches, seam-side down, until golden for 1-2 minutes. Flip and cook for another 1-2 minutes until golden and heated through. Let them cool for 1 minute, then halve and serve.
