Indulge in pecan-topped chocolate turtle muffins!
Ingredients:
  • 1/2 cup semisweet chocolate chips
  • 3 tablespoons butter or margarine
  • 1/3 cup buttermilk
  • 1/3 cup packed brown sugar
  • 1 teaspoon vanilla
  • 1 egg
  • 1 cup all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 cup chopped pecans
  • 24 milk chocolate-covered caramels (from 5.3-oz bag), unwrapped
  • 36 small pecan halves
Instructions:
  • Preheat your oven to 400°F, then generously coat all parts of 12 standard-size muffin cups with cooking spray.
  • In a 1 1/2-quart heavy saucepan, gently melt together the chocolate chips and butter over low heat, stirring regularly until smooth. Allow the mixture to cool for a bit. Then, mix in the buttermilk, brown sugar, vanilla, and egg.
  • Combine flour, baking soda, salt, and chopped pecans in a large bowl. Gently fold in the chocolate mixture until just combined. Divide the batter evenly among muffin cups, then press one caramel into the center of each.
  • Bake the muffins for 14 to 16 minutes, or until a toothpick inserted 1/2 inch from the edge comes out clean. Cool for 1 minute, then invert the muffin pan onto a cookie sheet to release the muffins. Press a caramel onto the bottom of each muffin while they are still warm. Return the muffins to the oven for about 1 minute to soften the caramel for adding pecan halves.
  • Top each muffin with a trio of pecan halves on the gooey caramel. Allow the caramel to slightly set for about 10 minutes before serving. Enjoy warm if preferred.
