Whip up quick and easy Valentine's Day sugar cookies without chilling the dough.
Ingredients:
  • 1 cup butter, softened
  • 1 cup white sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 0.5 teaspoon almond extract
  • 3 cups all-purpose flour
  • 2 teaspoons baking powder
  • 0.5 (16 ounce) package white confectioners' coating (such as CANDIQUIK®), or as needed
  • 1 (3 ounce) bar red candy melts (such as Wilton®), or as needed
Instructions:
  • Heat the oven to 350°F (175°C).
  • Cream butter and sugar in a stand mixer with a paddle attachment until smooth, then mix in egg, vanilla, and almond extract.
  • In a separate bowl, mix flour and baking powder, then gradually add to the butter mixture. Combine thoroughly. Knead with wet fingers, adding flour as needed, until dough is elastic and bounces back.
  • Roll the dough to a consistent thinness and cut into your preferred shapes, then arrange them 2 inches apart on cookie sheets.
  • Bake until edges turn golden, about 10 minutes in the preheated oven. Let cool on the cookie sheets until firm before moving to a cooling rack.
  • Melt confectioners' coating in the microwave following the package directions. Stir in red candy melts until you achieve the desired color. Dip the cooled cookies in the candy coating and place on waxed paper to set for about 5 minutes.
