Indulgent puff pastry tart with tart apples and tangy goat's cheese.
Ingredients:
  • 2 vanilla beans
  • 110g (1/2 cup) caster sugar
  • 50g butter, finely chopped
  • 4 Pink Lady apples, cored, each cut into 6 pieces
  • 1 tsp red wine vinegar
  • 375g packet butter puff pastry (see note), or puff pastry block, thawed in the fridge
  • 20g (1/4 cup) fresh white breadcrumbs
  • 140g aged goat's cheese, (such as Kervella Affine), cut into 5mm-thick slices
Instructions:
  • Split vanilla beans lengthwise and scrape out the seeds into a bowl with sugar. Sprinkle the sugar mixture and butter over the base of a large, heavy-based frying pan. Arrange the apples on top in a single layer and drizzle with vinegar. Cook over low heat until the mixture bubbles, then increase the heat to medium and cover to cook for 6-8 minutes until the apples are almost tender. Remove the apples with a slotted spoon to cool, and keep the cooking liquid in the pan.
  • Preheat oven to 250C. Roll out pastry on lightly floured surface to a 27cm rough square, 4mm thick. Trim to a 26cm round shape. Place on oven tray, score a 1.5cm-wide border with a small knife, and refrigerate for 15 minutes before baking.
  • Sprinkle breadcrumbs over the pastry inside the border, layer the apples in beautiful concentric circles. Lower the oven temperature to 220°C and bake for 20 minutes. Nestle pieces of tangy goat's cheese among the apples and bake for an additional 10 minutes or until the pastry is golden and puffed.
  • In a pan, simmer the reserved liquid until it thickens into a syrupy consistency. Drizzle it over the tart before serving. Enjoy it warm or at room temperature.
