Vanilla & cinnamon poached peaches

Elegant Peach Dessert perfect for entertaining.
Ingredients:
  • 6 (about 900g) firm ripe peaches
  • 1L (4 cups) water
  • 430g (2 cups) caster sugar
  • 1 vanilla bean, split lengthways
  • 1 cinnamon stick
  • Greek Style Yoghurt, to serve
Instructions:
  • Make a small cross on the base of each peach using a sharp knife.
  • In a large saucepan, combine water, sugar, vanilla bean, and cinnamon. Stir over low heat until the sugar dissolves.
  • Place the peaches in the pan, cover with a disc of non-stick baking paper, and gently press down. Simmer for 10 minutes or until tender. Remove the peaches using a slotted spoon and transfer to a large heatproof bowl. Allow them to cool slightly before using.
  • First, bring the poaching liquid to a vigorous boil over high heat. Let it simmer, uncovered, for 15 minutes until it reduces by half. Allow it to cool for 30 minutes, then remove the vanilla bean and cinnamon stick.
  • Peel peaches, discard skins, then distribute among bowls. Drizzle with syrup and serve with yogurt.
