Cinnamon poached fruit with soy custard

Indulge in a guilt-free dessert of poached fruit and vanilla custard.
Ingredients:
  • 250ml (1 cup) water
  • 100g (1/2 cup) caster sugar
  • 1 x 7cm cinnamon stick
  • 1 x 500g pkt Angus Park traditional dried fruit salad
  • 160ml (2/3 cup) low-fat vanilla custard
Instructions:
  • In a saucepan over gentle heat, mix together water and sugar. Stir continuously for 2 minutes, or until the sugar completely dissolves.
  • Sprinkle in the fragrant cinnamon. Crank up the heat and let it come to a vigorous boil. Lower the heat to a gentle simmer and cook for 5 minutes until the syrup slightly thickens.
  • Lower the heat to a gentle simmer. Toss in the fruit, making sure it's well coated with the syrup. Let it cook covered for about 5 minutes or until the fruit becomes tender. Distribute the fruit among individual serving bowls and generously drizzle with the syrup. Serve alongside some creamy custard.
